The Ultimate Cold Brew Coffee Guide: How to Brew It, Why You'll Love It

What Is Cold Brew Coffee?
Cold brew isn't iced coffee. Iced coffee is brewed hot and poured over ice — it's fast, but the heat extraction can leave bitterness behind. Cold brew is steeped in cold or room-temperature water for an extended period (usually 12–24 hours), resulting in a concentrate that's naturally smooth, low in acidity, and rich in flavor.
If you've ever found regular coffee too harsh on your stomach, cold brew is worth trying. The slow, cold extraction pulls fewer of the acidic compounds that can cause that familiar bite.
Why Cold Brew Tastes Different
Temperature dramatically changes which flavor compounds dissolve from coffee grounds. Hot water is efficient — it extracts quickly and pulls a wide range of compounds, including acids and some bitter notes. Cold water is selective. It favors the sweeter, chocolatey, and mellow notes while leaving much of the acidity behind.
The result: a cup that tastes naturally sweeter and rounder, even before you add anything to it.
How to Make Cold Brew at Home
You don't need any special equipment. Here's a simple method that works every time:
What You'll Need
- Coarsely ground coffee (a coarse grind prevents over-extraction and makes filtering easier)
- Cold or room-temperature filtered water
- A large jar, pitcher, or French press
- A fine mesh strainer, cheesecloth, or paper filter
The Ratio
Start with a 1:4 ratio of coffee to water for a concentrate (e.g., 1 cup of grounds to 4 cups of water). If you want a ready-to-drink brew, go 1:8. You can always dilute concentrate with water, milk, or oat milk to taste.
The Method
- Combine coarsely ground coffee and cold water in your container.
- Stir gently to make sure all grounds are saturated.
- Cover and refrigerate (or leave at room temperature) for 12–24 hours. The longer you go, the stronger and more concentrated the brew.
- Strain through a fine mesh strainer lined with cheesecloth or a paper filter.
- Transfer to a sealed jar or bottle. Cold brew keeps in the refrigerator for up to 2 weeks.
Choosing the Right Beans for Cold Brew
Not all coffee is created equal when it comes to cold brew. Medium and dark roasts tend to shine — they have the chocolatey depth and lower acidity that the cold extraction method amplifies beautifully.
At Emotive Coffee, we've crafted two blends specifically built for the cold brew process:
- Dorian (Cold Brew) Medium — A smooth, approachable medium roast with balanced sweetness. If you're new to cold brew or prefer a lighter, brighter result, Dorian is your starting point.
- Phrygian (Cold Brew) Dark — A bold, rich dark roast with deep chocolate and low-acid intensity. Perfect for strong concentrate that holds its own over ice or mixed into coffee cocktails.

Cold Brew Tips & Troubleshooting
Too weak?
Steep longer (up to 24 hours) or increase your coffee-to-water ratio. Make sure your grind isn't too coarse.
Too strong or bitter?
Dilute with water or milk. You can also try a shorter steep time or a slightly coarser grind.
Cloudy brew?
Totally normal and safe to drink. For a cleaner cup, filter twice — once through a mesh strainer, then again through a paper coffee filter.
Room temp vs. refrigerator?
Room temperature brews faster (12–14 hours) but fridge steeping (18–24 hours) tends to produce a cleaner, slightly sweeter flavor. Both work — experiment and see which you prefer.
Serving Ideas
Cold brew is incredibly versatile. Try it:
- Over ice, straight or diluted 1:1 with water
- With oat milk or cream for a smooth, café-style drink
- As a coffee tonic — mix with sparkling water and a splash of citrus
- In smoothies or protein shakes as a natural caffeine boost
- In baking — cold brew concentrate adds deep coffee flavor to brownies, cakes, and tiramisu
